Cinco de Mayo, or the 5th of May, marks the first holiday of the year where we enjoy warmer weather, tequila, good food and a fiesta honoring our love for Mexican culture. Sure, we are supposed to be celebrating the Mexican victory over French forces at the Battle of Puebla in 1862, but let's not get into the semantics. Rather, let us rejoice in the fiesta. Tacos
Grab some corn tortillas, toppings, flank steak and get to marinating! Without the marinade your carne asada tacos are just steak tacos and that's fine, just like Taco Bell is fine to enjoy and celebrate Cinco De Mayo. With that said, give it at least few hours to marinate and then bbq it over charcoal for the most authentic chargrilled flavors.
2 lbs flank steak
Mix and soak the steak for at least 3 hours. BBQ until charred and to your liking. Finely chop the steak and make those tacos you've been drooling over on instagram.
If you have extra money to throw around, consider buying lots of $2 avocados at your local California grocery store and making an extra large bowl of guacamole for your friends and family to be green with envy (do share though). Be sure to post about it too.
Mix everything together and enjoy! Save a few leaves of cilantro for garnish, or completely leave out if you think cilantro tastes like soap water like our dad says.
