 INGREDIENTS

12 Large Eggs

1/4 c. mayonnaise

1/2 teaspoon dijon mustard

4 oz Bloody Gerry mix pan reduced or microwave reduced by half ( 4 oz reduced to 2 oz)

Kosher salt

Freshly ground black pepper

1 tbsp. old bay seasoning

1 tbsp celery salt

1 pack of bacon

Gherkins, for garnish

Celery leaves, for garnish

Step 1

Put eggs in boiling water for 7 minutes and then add to an ice bath. Wait until the hardboiled eggs are cooled to peel and separate the whites from the yolks. Cook bacon for 17 minutes on a sheet pan at 350* and chop into bite size squares once cooked and cooled.

Step 2

To bowl with yolks, add mayonnaise, tomato paste, horseradish, lemon juice, hot sauce, and celery seed and mix until well combined. Season with salt and pepper. Transfer to a piping bag or ziplock bag and snip the tip.

Step 3

Place old bay seasoning, celery salt, and pepper on a small plate and press cut side of eggs into seasoning. Place eggs on a plate and pipe filling onto each egg. Top with a pickle slice, square of bacon and celery leaves as garnish.

Kick it up a notch by adding a few dashes of Lizano Tabasco Hot Sauce to the filling mixture and salt crust with Habanero Sea Salt.
